How long have you worked at Loxleys and what did you do before?: Nearly four years, I have been a chef for the last 20 years.
Why Loxleys: The opportunity of working in a fine restaurant in the centre of town and working with fresh produce and local suppliers.
What's your biggest career influence: I got a job in a kitchen when I was 15 to earn some pocket money and one day one of the chefs rang in ill so the head chef asked me to help and I was hooked. Food is art - the way you present dishes and arrange things on plates.
What's your favourite part of the job?: Using new ingredients that I have never explored before. The world we live in is always evolving and there are always new ingredients and produce to work with.
Describe your perfect day: Spending it with my family - I've got a seven-month-old baby girl and a 13-year-old step-daughter - on a summer's day. A nice picnic or something in the Cotswolds maybe.
In 5 Years I Want To Be: Head chef hopefully.
Favourite Food: I like a little bit of everything, but I love Thai-influenced cuisine.
Favourite Wine: I'm more of a beer man - a nice pint at the end of a busy night!
Favourite Holiday Destination: I like travelling round Europe. I think Europe is such a vastly different area, with so many different places to visit.
You may be Interested to know: I actually wanted to be an architect when I was younger.
