• How long have you worked at Loxleys and what did you do before?: I've been at Loxleys for about eight months. I was working in a different restaurant but I wanted to learn new skills and really push myself and prepare great food, so I was lucky enough to get a job here.
• Why Loxleys: I had heard about Loxleys and that it not only made great food, but was a great place to work with great people and customers. 
• What's your biggest career influence: I have always loved food. I worked for a year as a chef in Italy and fell in love with cooking so I wanted to carry on and spend my life cooking wonderful food. Being Italian, I love fresh ingredients and produce, which makes working in this area and particularly this restaurant the perfect place for me. Since coming to Loxleys I've learned so much from the other chefs around me, it's had an influence on the way I cook.
• What's your favourite part of the job?: The cooking of course. I love the buzz of a busy service and seeing dishes that I have prepared leaving the kitchen looking fabulous, knowing they will make people happy. 
• Hobbies: Anything food-related, meals out, cooking at home, spending time with friends.
• Describe your perfect day: For me a perfect day would start with a lie-in, then maybe going out for lunch and having a beer, generally enjoying a day off and having a long, lazy meal with people I care about.
• In 5 Years I Want To Be: I hope to still be working here in five years and having progressed as a chef.
• Favourite Food: I love pizza, what can I say! 
• Favourite Wine: I tend to prefer beer to wine, but I do enjoy a good Primitivo.
• Favourite Holiday Destination: Spain - it's like Italy, but not Italian, and is great for learning about new flavours and ideas that I can bring into my own cooking.
